Carbohydrates supply the majority of energy for the body, providing the best source of glucose. Glucose is the primary fuel our muscles and brains need for movement, clear thinking and consistent energy.
There are two significantly different types of carbohydrates - simple and complex. Simple carbohydrates are known as simple sugars – table sugar, as well as honey, fructose, molasses, and lactose.
Complex carbohydrates are found in starches (whole grains and starchy vegetables, such as potatoes), legumes (beans and peas), and vegetables (greens, broccoli, zucchini). These are what we at Mindfullyfed call ‘whole foods.’ They look the same on our plate as they did on the vine.
